    • Method: Build in a highball glass over ice. Stir gently to combine.
    • Garnish: A lime wedge and a candied ginger piece.
    • Why it works: The mezcal’s smokiness is beautifully tempered by the spicy sweetness of ginger beer, creating a complex yet incredibly drinkable cocktail.
