Building a Happy Hour Menu That Actually Works

Happy Hour done right is one of the best tools you’ve got. It fills seats during the 4-7pm stretch, gets new faces through the door, and builds momentum into the evening.

Done wrong, though, it’s a fast way to lose money. Discount the wrong drinks and you’re eating into margin for nothing. Put complicated cocktails on the menu, and your bartenders end up buried while customers wait too long for a drink that’s meant to be quick and cheap.

Here’s how to get the balance right.

Pick Drinks That Are Cheap to Make, Not Just Cheap to Sell

The rule here is straightforward: don’t discount anything that takes ages to build or costs a fortune in liquid. A 2-for-1 on an eight-ingredient craft cocktail is going to hurt.

Stick to things that can be batched ahead or built straight in the glass – Highballs, Spritzes, Collins, a good Sour. Anything built around soda, tonic, or a house syrup barely costs anything per serve. A nice botanical G&T or a fruit spritz looks great, feels like good value to the guest, and your ingredient cost stays well under 20%.

Set Your Station Up for Speed

The moment Happy Hour starts, orders come in fast. If your setup isn’t ready for that, you’ll get a queue at the bar within minutes.

Keep a dedicated speed rail just for Happy Hour – only the spirits and pre-batched bottles you actually need, within easy reach. Give your bartenders proper bottom-weighted shakers that seal and chill quickly, and pourers that keep liquid moving without dripping everywhere. Small things, but they add up over a busy two hours.

Don’t Let Portions Slip, Even When It’s Busy

It’s tempting to free-pour when things get hectic, but that’s exactly when you can’t afford to. Over-pouring on already-discounted drinks is one of the fastest ways to wipe out any margin you had left.

Use Happy Hour to Upsell

Happy Hour works best as a way in, not a dead end. Put two or three cheap, simple drinks on the list, then sit a premium option right next to them, a standard margarita alongside a mezcal paloma for a couple of quid more, say. People upgrade more often than you’d think when it’s right there in front of them.

Same goes for food. Pair drinks with something salty and shareable – olives, spiced nuts, whatever suits your kitchen. A guest who came in for a £6 cocktail and adds a bowl of fries is suddenly a lot more valuable than the discount alone suggested.

Get the drinks right, get the station right, keep your pours honest, and give people a reason to spend a bit more than they planned. Do that and Happy Hour stops being a quiet patch you tolerate and starts being one of your most profitable periods.
