Get Your Bar Ready for a Busy Autumn

Summer’s over, and with it goes the easy money from beer gardens and packed terraces. But don’t panic – autumn brings its own crowd, if you play it right. The trick is switching gears fast instead of just riding out the slow patch and hoping December saves you.

Here’s what actually works from September through November.

Ditch the Summer Menu

Nobody wants a frozen daiquiri when it’s dark and drizzling outside. Your customers are craving warmth and spice now – cinnamon, nutmeg, star anise, charred apple that tastes like autumn in a glass. An Old Fashioned, a good Hot Toddy, spiced rum done right – these seasonal drinks are proper money-makers.

And presentation matters more with these drinks. Swap in heavier glassware, maybe a copper-plated jigger or antique brass bar spoon. It just looks right with a warm drink in hand.

Grab the After-Work Crowd

Nights draw in earlier, so people aren’t lingering till midnight on a Tuesday, but they’ll absolutely pop in straight from work if you give them a reason to. Try an Autumn Aperitivo Hour, 5 to 7pm, spritzes and mulled cider and maybe a sharing board. That’s your mid-week footfall sorted.

Just make sure your team can move fast during that window – nobody’s queuing for ten minutes after work. A well-stocked speed rail with your autumn syrups and spirits already lined up makes a real difference here.

Make People Want to Stay Indoors

When it’s cold out, your venue needs to feel like the better option than home. Lighting, table setup, general vibe—it all counts. Keep tables tidy, and if you’re doing hot drinks, like mulled wine and Irish coffee, set up a proper station for it.

Lean Into the Calendar

Autumn’s got a lot going for it – big matches, Halloween, people starting to think about Christmas parties. Use it. Whiskey tastings or a cocktail masterclass on a normally dead Tuesday can pull in a crowd that wouldn’t normally show up midweek.

And on the nights it does get busy, your back bar needs to keep up. Non-drip optics and solid Boston shakers mean your staff aren’t fumbling when it matters most.
